Balsamic Caramelized Onion with Shrimp Pasta

Can you tell my husband is a pescatarian? Yes… I do tend to make recipes with a lot of shrimp or seafood because it is the only thing my husband eats. 

Here is a recipe that was inspired by Bertolli Riserva Balsamic Vinegar and Caramelized Onions Sauce. Normally I don’t like jarred sauces but I felt like pulling a semi-homemade like Sandra Lee. I use the jar sauce but enhance the flavors with fresh ingredients. I add more caramelized onions, balsamic vinegar, baby spinach, garlic and shrimp. The result is a yummy dish for a week night. I did make this in an Instant Pot but you can make it without one. Also, please pretend that you see the frozen shrimp added to the cooking video I made. For some reason I forget to press record when I added the shrimp.

Here is how I made it:

Balsamic Caramelized Onions with Shrimp Pasta

Ingredients

  • 1 tbs olive oil
  • 1 tbs butter
  • 1 onion, sliced
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1 cup baby spinach
  • 1 lb spaghetti or pasta
  • 1 jar of Bertolli Riserva Balsamic Vinegar and Caramelized Onions sauce
  • 4 cups of chicken broth
  • 1 lb frozen shrimp (if you are using Instant Pot)

Instructions

INSTANT POT INSTRUCTIONS

Set Instant Pot to sautè medium.

Once hot, add oil and butter.

Once butter is melted add sliced onions.

Slowly cook the onions, stirring every few minutes. If the onions start to burn, turn down heat on Instant Pot.

After 10 minutes, add salt and sugar to help caramelize the onions.

If the onions start to stick, add a little water.

After the onions have caramelized add the garlic and cook for a minute.

Add the vinegar. Be careful of the fumes from the vinegar. Cook for a minute.

Now add the spinach and give it a stir.

Press cancel on Instant Pot.

Lay pasta on top of the spinach.

You might have to break the Italian cardinal rule of breaking the spaghetti if you cannot fit it in the pot. Sorry.

Pour jar of sauce over the pasta.

Add broth over the sauce.

Place frozen shrimp on top.

Set Instant Pot to manual high pressure for 4 minutes with the vent closed.

After a natural release, open the pot.

Give the pasta a stir and enjoy.

ON STOVETOP

In a dutch oven set over medium-low heat, add oil and butter.

Once butter is melted add sliced onions.

Add pasta.

Turn up heat so that the sauce boils.

Once it boils, turn down heat and cover pot.

Cook for about 4 minutes.

Add shrimp and cook for another 4 minutes or until shrimp is pink and pasta is al dente.

Give the pasta a stir and enjoy.
