Ingredients
  • ¼ cup oil
  • 3 tbs butter
  • 2 lbs mutton
  • 5 pods black cardamom
  • SPICE MIXTURE:
  • 3 sticks cinnamon (approx 4-5 inches total)
  • 20 green cardamom pods
  • 1 tbs cumin seeds
  • 1 tbs fennel seeds
  • PASTE MIXTURE:
  • 3 tbs Kashmiri red chili powder
  • ½ tsp asafoetida
  • 1 tbs ginger powder
  • ½ tsp turmeric
  • 1.5 tsp salt
  • 1 cup hot water
Instructions
  1. Using a spice grinder or coffee bean grinder, grind spice mixture to a powder.
  2. Set Instant Pot to saute high.
  3. Add oil and heat until warm. Add butter and melt.
  4. Add black cardamom and mutton to butter/oil mixture. Sear meat.
  5. Add spice mixture and mix. Cook for 2-3 minutes.
  6. Add spice paste mixture to a bowl and add water. Mix it well. Add to Instant Pot.
  7. Give everything in pot a nice stir.
  8. Press cancel on Instant Pot. Set to Manual Pressure for 6 minutes with vent sealed. Let pressure release naturally.
  9. Serve with rice or roti.
