- ¼ cup oil
- 3 tbs butter
- 2 lbs mutton
- 5 pods black cardamom
- SPICE MIXTURE:
- 3 sticks cinnamon (approx 4-5 inches total)
- 20 green cardamom pods
- 1 tbs cumin seeds
- 1 tbs fennel seeds
- PASTE MIXTURE:
- 3 tbs Kashmiri red chili powder
- ½ tsp asafoetida
- 1 tbs ginger powder
- ½ tsp turmeric
- 1.5 tsp salt
- 1 cup hot water
- Using a spice grinder or coffee bean grinder, grind spice mixture to a powder.
- Set Instant Pot to saute high.
- Add oil and heat until warm. Add butter and melt.
- Add black cardamom and mutton to butter/oil mixture. Sear meat.
- Add spice mixture and mix. Cook for 2-3 minutes.
- Add spice paste mixture to a bowl and add water. Mix it well. Add to Instant Pot.
- Give everything in pot a nice stir.
- Press cancel on Instant Pot. Set to Manual Pressure for 6 minutes with vent sealed. Let pressure release naturally.
- Serve with rice or roti.
