Homemade Granola

Granola plus fruit plus yogurt equals yum. I love parfaits. When I go out for breakfast, I end up ordering parfaits. My husband looks at me like I am crazy. He thinks I should be ordering  something fancier like eggs benedict. I disagree. It’s breakfast bliss.

Recently, I purchased an electric pressure cooker called the Instant Pot. One of the functions is a yogurt maker. So what did I do? I made fresh vanilla Greek yogurt in my Instant Pot.  If you do not have an Instant Pot, it is the best thing to have in your kitchen. You can purchase it here.

Of course I had to make granola too. What I like about this granola recipe is that I can use whatever I have in my house. I can sweeten it with honey, agave, etc. I can also add whatever nuts I have in the house or I can add dry fruits. It is up to me and whatever I am in the mood for. Today, I decided to make Honey Pecan Granola. Here is how I made it:

Take a medium size bowl and add oatmeal to it. Add brown sugar, nuts and cinnamon. This is where you can play around with the ingredients. You can either lower the sugar content or omit it. You can add walnuts, pecans or raisins, dried cranberries, pumpkin seeds etc. Mix it well with a spoon.

 

With the flame set to low, add oil and honey to a saucepan. You can substitute agave or maple syrup for the honey. Heat it until it warms through. Do not boil. Once it is warm, remove from the stove.

Add vanilla. You can use any extract you want or use a combination.

Pour it over the granola and mix well.

Spray a cookie sheet with vegetable spray or use silpat and spread it out on the pan.

Put it in the oven.

Stir every 10 minutes for about 30 minutes until it is nice and toasty.

Serve with your favorite yogurt and fruit or eat it plain as a healthy snack.

Ingredients

  • 4 cups rolled oats
  • 1/4 cup brown sugar
  • 1 cup chopped nuts, dried fruits, or seeds (you choose one or add both)
  • 1 tsp cinnamon
  • 1/2 cup honey (or agave or maple syrup)
  • 1/2 cup vegetable oil
  • 4 tsp vanilla extract (or any extract you want to use)

Instructions

Preheat oven to 325 degrees.

Mix first 4 ingredients.

Add oil and honey to a saucepan and heat until warm. Do not boil.

Remove from stove and add extract.

Add warm honey mixture to dry ingredients and mix.

Add mixture to a cookie sheet sprayed with Pam or use a silpat.

Bake for 30 minutes, stirring every 10 minutes.

Once cool, granola will harden and become crunchy.
