Juby’s Famous Goat Chops

Here’s a secret… this recipe is not mine. It is my sister’s famous recipe (with a couple of tweaks by me) for goat chops. These chops are melt in your mouth good. When I was pregnant with my first child, I couldn’t get enough MEAT. All I wanted was some red meat with a side of meat. Funny thing was that I hated goat chops before getting pregnant. I used to be a chicken girl. My sister came to visit me while I was pregnant and brought my husband her famous chops. Being pregnant and wanting any meat in sight, I ate it up like I had never seen food before. I ate the whole thing and was so sad when it was finished. I had to ask her the recipe. After that I was hooked.

Since goat meat is lean, it requires slow cooking to preserve the tenderness. I don’t have time for that. I use my… Instant Pot to start the cooking and then finish it off in a wok for a nice sear. It is marinated in cream and whole garam masala spices.

 

This is how I make it:

Juby's Famous Goat Chops

Serves: 4 Cooking Time: 45 minutes

Ingredients

  • 1 tsp. black peppercorns
  • 8-10 green cardamom pods
  • 4-5 black cardamoms
  • 1 tsp. cloves
  • 2 bay leaves
  • 1-2 sticks of cinnamon
  • 1 tbs. garlic paste (can substitute 5-6 garlic cloves chopped)
  • 1/2 tbs. ginger paste (can substitute 1/2 in ginger root chopped)
  • 1/4 cup dry chopped onion
  • 1 qt. heavy cream
  • 3 lbs. goat chops (or lamb chops. Any chop will do)
  • 3 tbs. coriander powder
  • 3 tbs. meat masala (I like Shan Meat Masala)
  • salt to taste
  • Cilantro for garnish

Instructions

Turn on Instant Pot to saute.

Once, the Instant Pot is hot, add all whole spices and stir for a few minutes. This brings out all the essential oils of the spices.

Add goat, pastes, and dry onion.

Pour heavy cream over goat and give it a stir.

Close lid of Instant Pot and set valve to closed.

Set on Manual for 5 minutes with a natural release.

Once pressure is released, open Instant Pot.

Place a strainer over a bowl and strain goat from Instant Pot, reserving liquid for later.

Heat a wok on high and sear goat chops in wok. All the whole spices should also be in the wok from the strainer.

Add a little of the reserved liquid. This uses the fat from the heavy cream and fries the chops in the liquid.

Once, the chops are nice and brown, add coriander powder, meat masala and salt.

Add a little of the reserved liquid to help spices adhere to chops.

Cook for a couple of minutes.

Garnish with cilantro.
