Inspired by Cheesecake Factory Spicy Chipotle Pasta
This is a vegetarian version of the Chipotle Pasta from Cheesecake Factory

Ingredients
- 2 tbs olive oil
- 1 green bell pepper, diced
- 1 med yellow onion, diced
- 3 cloves garlic, minced
- 2 cups heavy cream
- 2 - 3 tbs chipotle pepper sauce from canned adobe peppers
- ¼ cup honey or less if you want it spicier
- ½ cup frozen peas
- ½ cup chopped spinach
- salt and pepper to taste
- 1 pound penne pasta
Instructions
- Prepare pasta according to instructions.
- Chop the bell pepper, onion and garlic finely.
- In a saucepan, heat a bit of olive oil over medium heat.
- Sauté the chopped pepper and onion until they become translucent and fragrant then add garlic and sauté for another minute.
- Add heavy cream, chipotle and honey to the pan. Cook for about 2 minutes.
- Add spinach until wilted and peas are cooked through. Season with salt and pepper.
- Put penne in sauce with 2 large spoons of pasta water and combine.
- Serve hot
