A twist on the traditional Vodka Sauce

Ingredients
  • 2 tablespoons olive oil
  • 2 small shallots, finely chopped
  • 3 cloves of garlic, minced
  • 3 tablespoons tomato paste
  • 1 cup of heavy cream
  • ¼ cup of mezcal
  • 2 teaspoon red pepper flakes (adjust according to your spice preference)
  • 2 tablespoons butter
  • ¼ cup grated parmesan and more for toppping
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • 1 pound pasta of choice
Instructions
  1. Cook pasta separately. When the pasta is done, save ¼ cup of the pasta water before draining
  2. Heat olive oil in a saucepan over medium heat. Add the finely chopped shallots and minced garlic, sautéing them until they turn translucent and aromatic.
  3. Add tomato paste and cook until paste is caramelized or appears darker. I cook it for a good 10 minutes.
  4. Reduce the heat to low and add the heavy cream, stirring gently to combine. The cream will add a velvety texture to the sauce.
  5. Time to introduce the star ingredient—mezcal! Pour the mezcal into the sauce and continue stirring. The mezcal's smoky undertones will infuse the sauce with a unique and vibrant character.
  6. Sprinkle red pepper flakes, adjusting the latter according to your preferred level of spiciness. Stir everything together, ensuring the seasonings are evenly distributed.
  7. Once the alcohol evaporates, add butter and season the sauce with salt and pepper to taste, remembering to taste as you go and adjust accordingly.
  8. Add pasta and pasta water to the sauce along with parmesan cheese.
  9. Garnish with fresh basil leaves and top with more parmesan cheese.
