One of my favorite dishes to cook in the Instant Pot is Rogan Josh. It’s an easy recipe that doesn’t require much effort and comes out tasting like you slaved over the stove.
Rogan Josh is a Kashmiri dish made with goat or lamb and is usually red in color. It is a meat stew that gets its red color from Kashmiri red chilies. Typically is it made with ground spices with variations made with yogurt and/or onions. I make mine with only spices which is why it is a quick dish to make.
I take 2-3 sticks of cinnamon, 20 green cardamom pods, 1 tbs cumin seeds, 1 tbs fennel seeds, and grind them in a spice grinder or coffee bean grinder until it is a powder.
Add oil and butter (I prefer butter to ghee but feel free to use ghee as it is more traditional) to the hot Instant Pot and add black cardamom.
Add to that 2 pounds of goat (or lamb if you prefer) to the Instant Pot and sear. Add the spice mixture and cook the spices for a couple of minutes.
Now make the spice paste with 3 tbs Kashmiri red chili, tbs ground ginger powder, 1/2 tsp asafoetida, 1/2 tsp turmeric, 1.5 tsp salt, and 1 cup of hot water. Add to Instant Pot.
Close the lid of the Instant Pot and set to sealing. Turn on manual pressure for 6 minutes. Let pressure release naturally. Serve with rice or roti.
